Consider St. Patrick's Day

Since I was there in the mid-70's when it was in full swing, I have some experience with "the troubles", in liaison with 62 Commando in Belfast, Antrim and Derry. They were dark times and thank God, they have passed. But St. Patrick's Day brings out a few memories.


And on the lighter side of things.


There is a lot of green beer served in the US and there will be fights breaking out in Irish bars/pubs by mid-evening over small (imagined) slights -- of the sort that one would see in Ireland in the normal course of life. Except that they don't drink green beer in Ireland.

  2. St. Patrick's Day means corned beef and cabbage. My beautiful Costco full round beef is waiting patiently in the fridge to be cooked on Saturday. No parsnips or rutabagas this year -they were too expensive. We'll have to slum it with red potatoes, carrots, onions, and, of course, cabbage. I love cabbage.

    1. What's not to love about corned beef and cabbage? I expect that you marinade your own corned beef. That's the best way to do it, but it does take a long time to brine it properly. Don't tell anyone but my favorite part about the corned beef is using the left-overs for sandwiches - with a bit of mustard.
